Bilberries are a delicious and nutritious berry that grows wild in the UK and many other parts of the world. These small, dark blue berries are packed with antioxidants and have a sweet yet tangy flavour that is perfect for baking. One of our favourite things to make with bilberries is a classic bilberry pie. This recipe is simple, yet delicious and is a great way to showcase the natural sweetness of bilberries. We love making this pie with freshly picked bilberries and it's a perfect treat to enjoy with family and friends. So, let's get started and make a delicious bilberry pie!
Ingredients:
For the pastry:
225g plain flour
100g unsalted butter, cold and cubed
25g caster sugar
1 egg yolk
2 tbsp cold water
For the filling:
500g fresh bilberries
75g caster sugar
1 tbsp cornflour
1 tbsp lemon juice
Instructions:
Preheat your oven to 200°C (180°C fan)/400°F/gas mark 6.
To make the pastry, place the flour, butter and sugar in a food processor and pulse until the mixture resembles fine breadcrumbs. Add the egg yolk and cold water and pulse until the mixture comes together into a ball. Wrap the pastry in cling film and chill in the fridge for 30 minutes.
Meanwhile, wash the bilberries and remove any stems. Place them in a large mixing bowl and add the caster sugar, cornflour and lemon juice. Mix well.
Roll out the pastry on a floured surface until it's large enough to fit your pie dish. Line the dish with the pastry, then trim the edges.
Spoon the bilberry filling into the pastry case and smooth it out.
Roll out the remaining pastry and cut it into thin strips. Arrange the strips in a lattice pattern over the filling.
Bake the pie in the preheated oven for 35-40 minutes, or until the pastry is golden brown and the filling is bubbling.
Remove the pie from the oven and allow it to cool for a few minutes before slicing and serving.
